席に案内する

When customers come in,
「IRASSHAIMASE, Good evening, sir/madam, How are you, today? 」

To check the booking,
「Do you have a booking?/ Have you booked a table?」

If customers have a booking,
「May I ask under whose name, please? / Under whose name, sir/madam?」

To check the table,
「One moment please, I'm going to check your table.」

If customers don't have a booking,
「How many of you, please? / Table for two (nos. of the guest)? 」

To show them to their table,
「Please follow me./ This way, please.」

注文を取る

After the customer is seated,
「Here is the wine list and the specials for tonight. 」

After giving menus to the customers, (always ladies first), ask them;
「Would you like any drinks? 」
「Would you like to start with any drinks? 」
「Can I get you anything to drink? 」

Before opening any BYO wine,
「May I open this for you?」
「Which one would you like to be opened first?]
「I will keep this in the fridge for you.」

After taking the drinks out to the customers, ask them;
「Would you like to order now? 」
「May I take your order now? 」

If the customers aren't ready to order,
「Would you like me to come back in a few minutes? 」
「I will come back in a few minutes.」
「Please call me when you are ready.」

* When taking their order, always reply them only with 'Yes' or 'Sure'. Never use 'OK' to them, please.

When a customer orders "Beef steak",
Staff;「May I ask you, how would you like your steak to be done/cooked?」
(rare, medium rare, medium, medium well-done, well-done), then add this on your order to kitchen.

when a customer orders Sushi with a child,
Staff;「Would you like your Sushi with Wasabi on the rice?」

After taking their order, repeat it clearly,
「I'll repeat your order; so that was one __________.」or
「I'll repeat your order, so that was the __________ as the entree and the _________ as the main(course).」

Then ask them;
「Would you like to share everything?」
「Can I bring everything when it is ready?」
「Your meal shouldn't be too long.」

The recommendation of Menu, (for example)

Customer: 「Can you recommend something? 」

• Recommending Sushi or Sashimi,
Staff:「Yes, how about Sushi & Sashimi Combination, you can enjoy both Sushi (raw fish on top of vinegared rice) and Sashimi (various pieces of raw fish.)」
「We have very nice fresh fish like _____ tonight.」 (You should check today's fish.)

•Recommending Tempura,
Staff:「Yes, how about the Tempura, it is prawns, fish and vegetables (carrots, pumpkin, zucchini, etc.), deep-fried in tempura batter. 」

•Recommending Teriyaki Salmon,
Staff:「Yes, how about the Teriyaki Salmon, marinated and cooked in Teriyaki sauce.」

•Recommending Pork Gyoza,
Staff 「Yes, how about the Pork Gyoza, it is steamed/pan-fried Pork dumplings with a spicy soy sauce.」

• Recommending a drink,
Staff;「Yes. How about Japanese beer, or Sake. 」

* If you are not confident to recommend some thing on the menu,
Staff : 「Could you wait a minute? I'll ask someone (who'll be able to make the best selection) for you.」

When taking their food out,
「I am sorry to have kept you waiting, here is the _______.」
「Please enjoy your meal. 」

If the food you take is not the same as what the customer has ordered,
「I'm sorry. I'll go and check your order. 」
「I'm sony. May I ask you what your order was, to be sure? 」

After they finish their entrées, changing the used sharing plates with new ones, talk to them;
「Have you finished with those?」
「Can I prepare your main dish now?」
「Your main dish/ course shouldn't be too long.」

When serving food, also ask whether they want to have any more drinks.
「Would you like another glass of wine?」
「Would you like another beer? 」
「Would you like another drink? 」
「Would you like some Japanese green tea?」
「Would you like some more tea?」

料理を下げる

After the customers finish their meal,
「Have you finished with those?」
「How was everything? 」
「How was your meal?」
「Can I take these plates away for you? 」
「Would you like anything else? Some dessert or Japanese tea?」

会計をする

別れのあいさつをする

When a customer is leaving, say;
「Thank you! Have a nice night!」 (Arigatou gozaimashita.)

よく聞かれる事

* Things often asked by customers,
「Can we have the bill please?」
「 Can we nave the menu please?」

If you can't understand / answer to what a customer asks,
「One moment please, I'll go and find out for you.」
「One moment please, I'll call someone who'll be able to answer your question. 」
「I'm sorry, I'll ask the manager for you.」

*NEVER say 「I don't know. 」,instead of the above.

When answering customers, reply like followings;
「Sure, no problem!」. 「My pleasure」
「Certainly!」
「Won't be too long. 」
「One moment, please.」
「I'm sorry, we don't have that (those).」

When a customer thanks you;
「Not a problem at all. 」
「It was my pleasure. 」
「You're welcome.」

大切なこと

* In Australia it is the common sense to use the words, thank you* and *please" in any case, even to other staff.

* Please try to watch other staff's behavior, and lean the skills from them.

* If you talk to customers with a smile, clear voice, and confidence, they will understand what you say

* All customers expect you to be a professional parson of floor service, therefore you should keen holding the consciousness as a professional.

As the conclusion, please let me say that the basic idea of the customer service is to think how you would prefer to be served, when dinning in a restaurant.

* Please do not rely purely on this manual, and try to develop your own common sense and skills.

After putting the order through to the kitchen, take some sharing plates & appetisers out to the customers, (then explain what they are).
「Excuse me, here are your sharing plates and the appetisers for tonight, they are _____ in Japanese pickles.」

* If asking other staff for something,
「Can you take this/these to table _____ please?.」
「Can you help me, please?」,「Can you give me a hand, please?」
「Can you do this for me, please?」
「Do you want a hand?」
「Yes, please.」 「No thank you. 」
